Heat almond milk, monkfruit, coconut oil, and cacao powder together in a pot on medium heat.
Let mix heat until it simmers and monkfruit is dissolved.
Remove pot from heat and stir in vanilla, cashew butter, rolled oats, and hemp seeds until mixed.
Spoon a cookie sized amount onto a baking sheet lined with parchment paper.
When all cookies have been scooped, put them in the refrigerator for 2 hours until they are set.
Store uneaten cookies in the refrigerator in a container.
