Ingredients
- 1 Tbsp Bragg Organic Extra Virgin Olive Oil
- 1 medium onion diced
- 2 cloves garlic minced
- 2 cup dry green lentils rinsed well
- 1 large sweet potato peeled and cubed
- 6 cup vegetable broth
- 2 bay leaves
- 1/2 tsp turmeric
- 1/4 tsp cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
- fresh parsley to garnish
Instructions
- Put a large soup pot on medium heat.
- Add the oil and cook onion and garlic till lightly browned, about 3 minutes.
- Add the rest of the ingredients and bring to a vigorous boil.
- Now turn down to low and simmer uncovered, for about 20 to 30 minutes. Lentils should be cooked through.
- Remove from heat and adjust salt if necessary.
- Sprinkle with fresh parsley and enjoy!
