Reverse Your Fatty Liver Spinach & Quinoa Stuffed Tomatoes

Ingredients
  

  • 8 medium tomatoes ripe but firm, with stems and insides removed
  • 1 tsp salt
  • 2 cup water
  • 1 cup quinoa
  • 2 tsp Bragg Organic Extra Virgin Olive Oil
  • 3 cloves garlic minced
  • 6 cup fresh spinach chopped
  • 1 tsp chopped fresh parsley
  • salt & pepper to taste

Instructions
 

  • Preheat oven to 375*F.
  • In a medium saucepan bring water, quinoa and salt to a boil.
  • Lower the heat to simmer and cover. Cook for 15 minutes.
  • While quinoa is cooking, heat a frying pan with the oil.
  • Add the garlic and parsley and cook for 2-3 minutes.
  • Add the spinach and cook until just wilted. Remove from heat.
  • Add the cooked quinoa to the spinach mixture and mix well.
  • Add the salt and pepper to taste.
  • Evenly divide the filling and stuff the tomatoes.
  • Place the stuffed tomatoes in a covered baking dish(foil to cover the pan is fine).
  • Bake 20 minutes and enjoy!
