Preheat oven to 375*F.
In a medium saucepan bring water, quinoa and salt to a boil.
Lower the heat to simmer and cover. Cook for 15 minutes.
While quinoa is cooking, heat a frying pan with the oil.
Add the garlic and parsley and cook for 2-3 minutes.
Add the spinach and cook until just wilted. Remove from heat.
Add the cooked quinoa to the spinach mixture and mix well.
Add the salt and pepper to taste.
Evenly divide the filling and stuff the tomatoes.
Place the stuffed tomatoes in a covered baking dish(foil to cover the pan is fine).
Bake 20 minutes and enjoy!
