Ingredients
- 8 medium tomatoes ripe but firm, with stems and insides removed
- 1 tsp salt
- 2 cup water
- 1 cup quinoa
- 2 tsp Bragg Organic Extra Virgin Olive Oil
- 3 cloves garlic minced
- 6 cup fresh spinach chopped
- 1 tsp chopped fresh parsley
- salt & pepper to taste
Instructions
- Preheat oven to 375*F.
- In a medium saucepan bring water, quinoa and salt to a boil.
- Lower the heat to simmer and cover. Cook for 15 minutes.
- While quinoa is cooking, heat a frying pan with the oil.
- Add the garlic and parsley and cook for 2-3 minutes.
- Add the spinach and cook until just wilted. Remove from heat.
- Add the cooked quinoa to the spinach mixture and mix well.
- Add the salt and pepper to taste.
- Evenly divide the filling and stuff the tomatoes.
- Place the stuffed tomatoes in a covered baking dish(foil to cover the pan is fine).
- Bake 20 minutes and enjoy!
