Reverse Your Fatty Liver Quinoa Spring Rolls With Homemade Duck Sauce

Ingredients
  

  • 8 rice paper wraps
  • 1 cup Terrasoul Superfoods Organic White Quinoa
  • 1/4 red cabbage sliced
  • 6 celery hearts, sliced lengthwise
  • 4 green onions, thinly sliced
  • 3/4 cup sugar free apricot jam
  • 3 tbsp rice vinegar
  • 1 tbsp coconut aminos
  • 1 tsp garlic minced
  • 1/2 tsp chili paste
  • 1/2 tsp ginger puree
  • 1/2 tsp onion powder

Instructions
 

  • Soak rice papers in warm water for 10-15 seconds.
  • Place paper on a flat surface and add 3-4 tbsp of quinoa and veggies in the middle of the paper.
  • Fold the bottom section up into the middle, and then fold the sides into the middle.
  • Fold the top side down into the middle, and repeat the steps for the rest of the rice papers.
  • For the duck sauce, start with the jam and add the rest of the ingredients into a food processor until blended.
  • Serve the rolls with duck sauce on the side.
