Ingredients
- 1/2 cup quinoa, dry
- 1/2 cup hemp hearts
- 2 cups dried dates, pitted
- 1 cup almond milk
- 12 oz Lily's All Natural Dark Chocolate Chips – 45% Cacao
- 1 tsp Omica Organics Organic Liquid Stevia – Plain
- 1 tsp salt
Instructions
- In a large mixing bowl, combine the dried dates and almond milk.
- Allow the dates to soak for 1 hour at room temperature.
- Cook the quinoa in a medium cooking pot according to directions.
- Store cooked quinoa in the refrigerator while preparing the rest of the recipe.
- Using a blender, puree the soaked quinoa and mix together with large mixing spoon.
- In a separate large mixing bowl melt the chocolate chips in the microwave. Heat for 40 seconds at a time to prevent burning.
- Add the quinoa dates mixture and melted chocolate and hemp hearts and stir vigorously with a large spoon until thoroughly combined.
- Store the mixture in the refrigerator to allow it to thicken. 3 hours max
- Separate into 10 portions and manually roll them into balls or bites.
- Store on a tray lined with wax paper or parchment paper.
