Reverse Your Fatty Liver Quinoa Fried “Rice”

Ingredients
  

  • 3 tbsp butter
  • 2 eggs whisked
  • 2 medium carrots (diced)
  • 1/2 cup frozen peas
  • 1/2 cup green beans
  • 3 cloves garlic minced
  • salt and pepper to taste
  • 4 cups cooked quinoa
  • 1/2 cup broccoli, chopped
  • 2 green onions, thinly sliced
  • 3 tbsp soy sauce or more to taste
  • 1/2 tsp Sesame Oil

Instructions
 

  • Add 1/2 tbsp of butter to warm skillet on medium-high heat and scramble the 2 eggs.
  • When finished scrambling, set eggs aside on a separate plate.
  • In the same skillet, add 1 tbsp of butter to the pan and allow it to melt.
  • When melted, add carrots, onions, peas, garlic, green beans, and broccoli to pan with a pinch of salt and pepper.
  • Saute for 5 minutes or until onions and carrots are soft.
  • Increase heat to high and add the remaining butter and stir until melted.
  • When melted, add cooked quinoa, green onions, and soysauce and stir until combined.
  • Stir for an extra 3-5 minutes to fry the rice.
  • Add in the eggs and combine.
  • Then, add sesame oil, remove from heat, and combine
  • Serve hot!
