Ingredients
- 3 tbsp butter
- 2 eggs whisked
- 2 medium carrots (diced)
- 1/2 cup frozen peas
- 1/2 cup green beans
- 3 cloves garlic minced
- salt and pepper to taste
- 4 cups cooked quinoa
- 1/2 cup broccoli, chopped
- 2 green onions, thinly sliced
- 3 tbsp soy sauce or more to taste
- 1/2 tsp Sesame Oil
Instructions
- Add 1/2 tbsp of butter to warm skillet on medium-high heat and scramble the 2 eggs.
- When finished scrambling, set eggs aside on a separate plate.
- In the same skillet, add 1 tbsp of butter to the pan and allow it to melt.
- When melted, add carrots, onions, peas, garlic, green beans, and broccoli to pan with a pinch of salt and pepper.
- Saute for 5 minutes or until onions and carrots are soft.
- Increase heat to high and add the remaining butter and stir until melted.
- When melted, add cooked quinoa, green onions, and soysauce and stir until combined.
- Stir for an extra 3-5 minutes to fry the rice.
- Add in the eggs and combine.
- Then, add sesame oil, remove from heat, and combine
- Serve hot!
