Reverse Your Fatty Liver Moroccan Lentil Stew

Ingredients
  

  • 2 cups Arrowhead Mills Organic Red Lentils
  • 5 cups water or vegatable stock
  • 1 cup diced carrots
  • 1 cup diced pepper (seeded)
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 can diced tomatoes
  • 3 cloves garlic
  • 2 tbsp Bragg Organic Extra-Virgin Olive Oil
  • 1 tsp Anthony's Organic Tumeric Root Powder
  • 1 tsp Anthony's Organic Ground Ginger Root
  • 2 tsp Frontier Co-Op Cumin Seed Ground
  • 2 tsp Frontier Co-Op Coriander Seed Ground
  • Salt & Pepper to Taste

Instructions
 

  • Soak the lentils for 24-48 hours, longer is better.
  • When ready to cook, add to water or stock in a large pot and bring to boil.
  • Cover and set burner to low.
  • In a separate pan, add spices, oil, carrots, pepper, onion, and celery, and cook until onion is translucent (about 5 minutes).
  • When lentils are s oft, mix everything together and cook for an additional 15-20 minutes.
