Reverse Your Fatty Liver Moroccan Lentil Stew
Ingredients
- 2 cups Arrowhead Mills Organic Red Lentils
- 5 cups water or vegatable stock
- 1 cup diced carrots
- 1 cup diced pepper (seeded)
- 1 cup diced onion
- 1 cup diced celery
- 1 can diced tomatoes
- 3 cloves garlic
- 2 tbsp Bragg Organic Extra-Virgin Olive Oil
- 1 tsp Anthony's Organic Tumeric Root Powder
- 1 tsp Anthony's Organic Ground Ginger Root
- 2 tsp Frontier Co-Op Cumin Seed Ground
- 2 tsp Frontier Co-Op Coriander Seed Ground
- Salt & Pepper to Taste
Instructions
- Soak the lentils for 24-48 hours, longer is better.
- When ready to cook, add to water or stock in a large pot and bring to boil.
- Cover and set burner to low.
- In a separate pan, add spices, oil, carrots, pepper, onion, and celery, and cook until onion is translucent (about 5 minutes).
- When lentils are s oft, mix everything together and cook for an additional 15-20 minutes.
