Ingredients
- 1 medium onion diced
- 1 clove garlic minced
- 1 Tbsp olive oil
- 4 large leeks(white and light green parts only) chopped
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp coriander powder
- 6 medium potatoes peeled and cubed
- 2 whole bay leaves
- 4 cup vegetable stock
- 1 14oz can coconut cream
- sea salt and black pepper to taste
- fresh snipped chives
Instructions
- In a large soup pot cook the onions, garlic and olive oil till onions are softened.
- Add the thyme, rosemary and coriander and mix.
- Add the potatoes, leeks, bay leaves and vegetable stock and bring to a boil.
- Reduce heat, cover and simmer till potatoes are soft about 15 minutes.
- Remove from heat and remove bay leaves.
- Add the coconut cream.
- Blend the soup using an immersion blender , or hand mixer on low, till soup is blended to chunky state.
- Add salt and pepper to taste. Garnish with chives.
