Ingredients
- 1/2 head cauliflower cut into small pieces
- 3 tsp olive oil separated, plus more for frying
- 1/4 red onion chopped
- 3 cloves garlic peeled and chopped
- 1 cup oats(ground with food processor) or oat flour
- 1/2 cup bread crumbs
- 2 Tbsp Italian seasoning
- salt & pepper to taste
- fresh basil chopped for garnish
Instructions
- On a baking sheet, pile cauliflower and drizzle with 1 tsp oil. Mix around on the baking sheet to cover thoroughly, then spread out evenly.
- Place in a preheated 350* oven for 20 minutes.
- While cauliflower cooks, heat 1 teaspoon of oil in a pan over medium heat. Add onion and garlic and cook for 5 minutes.
- Remove from heat and set aside.
- Remove cauliflower from the oven and let cool 5-10 mins.
- Add the cauliflower, oats and garlic & onion mixture to a food processor. Pulse to combine, then put in a large bowl.
- Add bread crumbs, Italian seasoning, salt & pepper and remaining teaspoon of olive oil. Mix well.
- Shape into about 14 small size meatballs(if meatballs won't stay together, put in freezer for 7 minutes to firm and stabilize them).
- In the same frying pan as the onions and garlic were cooked in; pour enough oil to coat the bottom of the pan on medium to medium-high heat.
- Cook meatballs until browned on all sides and warmed through about 10-15 minutes(Lower heat if browning too quickly).
- Serve with your favorite hot marinara sauce.
- Garnish with fresh basil and enjoy!
