Ingredients
  

  • 4 cups cooked chickpeas
  • 1 small red onion, peeled and diced
  • 2 cloves garlic, peeled and minced
  • zest of 1 lime
  • juice of 4 limes
  • 1 small green pepper, finely chopped
  • 1/2 cup fresh chopped cilantro
  • 1/2 tsp salt to taste
  • 1 avocado,
  • 1 cup fresh baby spinach

Instructions
 

  • Combine all ingredients, except avodcdo, in a medium bowl and mix.
  • Add avocado before serving.
