Ingredients

  • 3 med Yukon gold potatoes, diced small
  • 1 small onion, sliced into strips
  • 1 large bell pepper, sliced into strips
  • 1 tsp honey
  • 1/2 tsp dry parsley
  • 1/2 tsp Old Bay Seasoning
  • salt to taste
  • pepper to taste

Instructions

  • Add all ingredients into a large bowl and toss well to evenly coat.
  • Distribute the mixture in a single layer in the air fryer.
  • Turn on air fryer to 400 and set for 15 minutes.
  • Check potatoes with a fork to confirm they are the right consistency for you. If they are undercooked – add a couple more minutes of cooking time.
  • Cool before serving.
