Reverse Your Fatty Liver Blueberry Mango Kale Salad

Ingredients
  

  • 1 bunch Kale, stalks removed & massaged
  • 1 Lemon
  • 1/4 cup extra-virgin olive oil
  • salt (to taste)
  • 2 tbsp honey
  • black pepper (to taste)
  • 1 mango, diced small (about 1 cup)
  • 1 cup blueberries
  • 2 tbsp Nuts of your choice

Instructions
 

  • In large serving bowl, add the kale, half of lemon juice, a drizzle of oil and a little salt.
  • Massage the kale until it starts to soften or wilt, 2-3 minutes.
  • Set aside while you make the dressing.
  • In a small bowl, whisk remaining lemon juice with the honey and lots of ground black pepper.
  • Stream in 1/4 cup of oil while whisking until a dressing forms, and you like how it tastes.
  • Pour the dressing over the kale, and add the mango, blueberries and nuts.
  • Toss & serve.
