Reverse Your Fatty Liver Vegan Cauliflower Lentil Loaf

Ingredients
  

  • 1 cup cooked lentils
  • 3 cups raw riced cauliflower
  • 1 cup chopped sweet onion
  • 1/2 cups chopped celery
  • 2 cups chopped bell pepper
  • 2 tbsp Anthony's Nutritional Yeast Flakes
  • 1 tsp garlic minced
  • 1 tsp Annie's Naturals Organic Dijon Mustard
  • 1/2 tsp Frontier Smoked Paprika Ground
  • 1/2 tsp Frontier Co-Op Cumin Seed Ground
  • 1/4 tsp black pepper
  • 1/4 tsp chipotle powder
  • 1/3 cup unsweetened homemade ketchup

Instructions
 

  • Preheat the oven to 400°F.
  • Saute onion and pepper in a skillet on medium heat until softened.
  • Use a food processor to rice the cauliflower until you have 3 cups of riced cauliflower.
  • Press the cauliflower with a towel to release excess water.
  • Cook lentils according to package and let it cool.
  • In a food processor, combine all ingredients until mixed well.
  • Line a 9 x 5 loaf pan with parchment paper and put mixture into the pan and smooth.
  • Spread ketchup on top and bake for 40-45 minutes.
  • Slice and serve!
