Reverse Your Fatty Liver Nutty Crunch Salad in a Jar
Ingredients
Dressing
- 1/3 cup natural almond butter
- 1-2 tbsp honey
- 1/4 cup freshly squeezed lemon juice
- 2 tbsp coconut aminos
- 1/4 cup water
- 2 tbsp rice wine vinegar
- salt and pepper to taste
Salad
- 4 green onions chopped
- 2 cups Terrasoul Superfoods Organic White Quinoa
- 1 med. carrot
- 1/2 cup frozen edamame beans
- 1/2 cup cooked chickpeas
- 1 ½ cups broc
- 1 ½ cups red cabbage thinly sliced
- 1/2 cup unsalted peanuts
Instructions
- Mix the Ingredients for the dressing (almond butter through salt and pepper) together in a small bowl then divide evenly among 4 jars.
- On top of the dressing in the jar, add the green onions first, then quinoa (approximately 1/2 a cup), then the carrot, the edimame and chickpeas, then broccoil , the cabbage, and the peanuts.
- Put the lids on the jars and store them in the fridge until it is time to eat them. Make sure to eat them within 5 days.
- When you are ready to eat them, turn the jar upside down into a bowl and make sure everything is out. Mix together and enjoy!
