Reverse Your Fatty Liver Nutty Crunch Salad in a Jar

Ingredients
  

Dressing

  • 1/3 cup natural almond butter
  • 1-2 tbsp honey
  • 1/4 cup freshly squeezed lemon juice
  • 2 tbsp coconut aminos
  • 1/4 cup water
  • 2 tbsp rice wine vinegar
  • salt and pepper to taste

Salad

  • 4 green onions chopped
  • 2 cups Terrasoul Superfoods Organic White Quinoa
  • 1 med. carrot
  • 1/2 cup frozen edamame beans
  • 1/2 cup cooked chickpeas
  • 1 ½ cups broc
  • 1 ½ cups red cabbage thinly sliced
  • 1/2 cup unsalted peanuts

Instructions
 

  • Mix the Ingredients for the dressing (almond butter through salt and pepper) together in a small bowl then divide evenly among 4 jars.
  • On top of the dressing in the jar, add the green onions first, then quinoa (approximately 1/2 a cup), then the carrot, the edimame and chickpeas, then broccoil , the cabbage, and the peanuts.
  • Put the lids on the jars and store them in the fridge until it is time to eat them. Make sure to eat them within 5 days.
  • When you are ready to eat them, turn the jar upside down into a bowl and make sure everything is out. Mix together and enjoy!
