  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, chopped
  • 1 finger (2") turmeric, chopped
  • 1 finger (2") ginger, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 small zucchini, chopped
  • 1 cup broccoli, chopped
  • 1 cup carrots, chopped
  • 1/2 cup green or yellow string beans, chopped
  • 1/2 cup red or golden beets, chopped
  • 1/2 cup shiitake mushrooms, chopped
  • 1/2 cup kale or chard, chopped

Instructions
 

  • Stirfry in a large pan or wok
  • Serve over brown rice or quinoa
