On a baking sheet, pile cauliflower and drizzle with 1 tsp oil. Mix around on the baking sheet to cover thoroughly, then spread out evenly.
Place in a preheated 350* oven for 20 minutes.
While cauliflower cooks, heat 1 teaspoon of oil in a pan over medium heat. Add onion and garlic and cook for 5 minutes.
Remove from heat and set aside.
Remove cauliflower from the oven and let cool 5-10 mins.
Add the cauliflower, oats and garlic & onion mixture to a food processor. Pulse to combine, then put in a large bowl.
Add bread crumbs, Italian seasoning, salt & pepper and remaining teaspoon of olive oil. Mix well. Shape into about 14 small size meatballs(if meatballs won't stay together, put in freezer for 7 minutes to firm and stabilize them).
In the same frying pan as the onions and garlic were cooked in; pour enough oil to coat the bottom of the pan on medium to medium-high heat.
Cook meatballs until browned on all sides and warmed through about 10-15 minutes(Lower heat if browning too quickly).
Serve with your favorite hot marinara sauce.
Garnish with fresh basil and enjoy!
